My Early Morning Adventure in the Kitchen {Banana Pancake Muffins}

One morning, I woke up and thought . . . hmmm. . . I really feel like making banana muffins. 

I asked myself, "Could I make muffins from pancake mix?".  

I grabbed the box of Krusteaz Pancake mix, my iPad and I was off on my pancake muffin adventure! 

Did you know that on the Krusteaz website there are many recipes you can make with their various forms of pancake mix? 

I've always liked how Krusteaz pancakes turn out which makes me partial to this particular pancake brand.  In my opinion, they are the closest to Cracker Barrel, which are my favorite pancakes of all time.  Yum! 

I was impressed.  :)

So, with some over ripe bananas, and pancake mix, I attempted some yummy easy peasy muffins.

Banana Pancake Muffins  

2 1/2 cups Krusteaz Pancake Mix* or any Pancake only add water mix
2/3 cup water
1/2 cup sugar
1/4 cup vegetable oil
1 egg
1 banana
You can also add nuts to your preference.

Preheat oven to 400°F.
In medium bowl, stir together pancake mix and remaining ingredients until moistened.
Do not overmix.
Spoon batter into lightly greased or paper-lined muffin pan, filling 2/3 full.
Bake 14-16 minutes or until toothpick inserted into center comes out clean.
